Alaska Rainbow Trout Fishing

Here is a simple and delicious Halibut recipe - one of our favorites!

4 Halibut filets

2-3 medium sized potatoes, shredded

fresh dill (2-3 sprigs) chopped

dijon or spicy mustard

vegetable cooking oil

thinly sliced lemon rounds

this works best if all the halibut filets are approximately the same size and thickness; thoroughly dry the halibut filets, set aside.

 

Mix the fresh dill in with the shredded potatoes.  Liberally coat all sides of the halibut filets in the mustard, then coat all sides with the potato mixture so that none of the fish is showing through. 

 

Over medium-high heat add enough oil in a heavy duty skillet to cover filets half-way. Heat oil, then carefully add the filets to the pre-heated oil and cook on each side 6-7 minutes, until potatoes are golden brown.  (you may have to adjust cooking temperature to prevent the potatoes from browning too quickly)

 

Drain on a stack of paper towels and serve immediately topped with the lemon slices and with a crisp green salad, chilled melon, and a tall refreshing glass of iced tea!

Fresh Red Salmon filets

Brown Sugar

Lemon Pepper

Citrus Pepper

 

Coat each filet with brown sugar, sprinkle the Lemon Pepper and Citrus Pepper over the top; wrap in foil, and cook over the grill until done (about 20 minutes, depending on the thickness of the filets).
